You would need to have a little time in hand to prep all things up, the dough has to rest and rise. So, whenever you wish to grab them a quick snack or dinner just plan it before – it will be worth your time!
Ingredients:
- All-purpose flour
- Almond/Soy milk
- Palm/Beet sugar
- Instant yeast
- Powdered flax seeds
- Sea salt
- Water
First Step: Flax seeds egg?
Yes, you got that right! We are all vegan – all-vegan eggs. To get the consistency and binding speciality of an egg, we would be creating a vegan egg with the help of flax seeds and water.
In a small bowl, add some flax seed powder and water, whisk them well together nicely and keep aside.
Second Step: Yeast – Yeast all the way
Ensure that the yeast mixture is well prepared and activated. A proper activation works wonders for any bread or bun. To make this mix you would need to warm some soy/almond milk – temp of 40*C, pour it into a small bowl; add some palm/beet sugar and the yeast in it. Mix it till the sugar is dissolved. Keep this aside and you will see the activation happening in about 5-10mins – the mixture will be foamy.
Third Step: Mix the Dough!
In a bowl, add the flour and sea salt, and combine them well. You would need to add the flax seed and yeast to the flour mixture. Create a well in the centre of the flour, re-whisk yeast and add to the flour. Mix it well. Now, whisk the flax seeds mixture again and pour it in as well. Combine all the ingredients well. In case you are using a dough mixer, you would need to run it for approx. 10mins on a low speed. Alternatively, you can transfer this mixture to a surface and knead it with your hands for a good 6-9 mins. Check that the dough is smooth and gluey. Tip – Insert a finger inside the dough and if it bounces back, it is well-kneaded dough. Grease some oil in a big bowl and place the dough inside it; you can even brush a little water on it. Cover with a wet towel and let it rest for an hour or till it has doubled in its size.
Fourth Step: Dividing the Dough
Dust some flour on the platform and place the dough on it. Divide the dough into equal portions and shape them nicely (do not overplay with the dough)
Fifth Step: The second stage of dough rising
Place a parchment sheet on a baking tray and keep all the balls on it, let them rise for about half an hour or more.
Sixth Step: Bake me Away!
Preheat the oven to 375*. Brush the risen buns with some coconut oil or alternatively, you can even use some milk. This step will give a nice brown crust to the buns. Place the tray in the oven and bake these for about 15-16 mins (till the top is light brown in colour)
